Omaha’s Henry Doorly Zoo & Aquarium is seeking an Assistant Manager to assist in all aspects of the Treetops Restaurant operations. In the absence of the Food & Beverage Manager, this position would assume responsibility for the restaurant.
Duties and Responsibilities (include but not limited to):
- Assist in supervising restaurant operations and employees (45- 75 employees).
- Prepare schedules for staffing the restaurant.
- Assist in placing weekly food, beverage, food supply, and janitorial supply orders for the restaurant and preventative maintenance records & inventory.
- Assist in maintaining records of product received and transferred to all Food & Beverage departments and other zoo departments.
- Assist in maintaining a controlled and secured inventory of quality products.
- Assist in supervising catering staff and food preparation as needed.
- Assist in daily opening, closing, and sanitation procedures; keep areas around buildings clean.
- Be knowledgeable of/and properly train employees on the acceptable procedures for food preparation and presentation.
- Maintain cash control policy and procedures are followed.
- Monitor compliance of all food & safety handling procedures.
- Monitor compliance of Omaha’s Henry Doorly Zoo operational guidelines.
- Attend scheduled department meetings.
- Ensure the restaurant maintains the standards set by the Zoo in quality, safety, service, and cleanliness for employees and customers.
- Assist in supervising the department’s recycling program.
- Monitor and maintain weekly/bi-monthly/or monthly inventory as needed.
- Cross train to work in all areas of Food & Beverage department and Guest Service areas as needed.
- Assist at special events in Food & Beverage Department.
Requirements, Knowledge, Skills and Abilities:
- Must be a minimum of 18 years of age.
- High school graduate with three years of experience in food service management.
- Certification of special training is helpful including, but not limited to: front line supervision, cash handling management, and compliance of health regulations and sanitary standards.
- Strong customer service skills with the ability to work with a variety of people.
- Outgoing personality with enthusiasm to present a positive image of the zoo.
- Ability to multi-task in a variety of the daily operation of the restaurant.
- Working knowledge of Microsoft Office products.
- Capable of operating and training personnel on point of sale cash register system.
- Knowledge of restaurant supplies, equipment, and ordering as well as inventory control.
- Candidates are required to pass a pre-employment background check, drug screen, and possess a valid driver's license with a good driving history.
Working Conditions and Physical Effort:
- Must be available to work weekends, holidays, and some evening hours.
- Must be able to work in confined areas where bending and lifting is necessary.
- Able to lift 50 pounds.
- Work in various weather conditions.
